Never thought of putting rhubarb and celery together but why not? I like celery, it's terribly underused. And I'll eat almost anything on top of a perfectly grilled pork chop.

I left Citizen Cake to work as Chef for Echo Valley Farm. I have a life long connection to this beautiful place and the owners and it has always been my dream to work in some way with the Echo Valley team. We have played around with various ideas for almost a decade. Now that the farm is in full swing we are working on products, farm to table dinners, and more. It's really a dream come true.

The last two years were sort of a crazy adrenaline blur opening restaurants. A fun blur. But also, a physically painful one. So this is my breath of fresh air so to speak!

And I am so happy to be here. I can't even begin to tell you. The farm is my walk-in refrigerator, my pantry, my therapy, my passion. It's sort of what every chef dreams of I think. I feel blessed to be here...


Congratulations. Very few are able to follow their passions. Bravo!
